Asian chicken broth

This light, lively broth features shiitake mushrooms, lemongrass, garlic, and cilantro and is absolutely delicious!

Ingredients
  

  • 4 cups chicken broth
  • 1 length lemongrass, cut into 1-inch pieces
  • 1 clove garlic, crushed
  • Handful of shiitake mushrooms, diced
  • 2 green onions, cut into ½-inch pieces
  • Himalayan salt
  • Black pepper
  • 2 tbsp coarsely chopped cilantro leaves

Equipment

  • 1 saucepan

Method
 

  1. In a saucepan, heat the broth on med heat. All veggies. Reduce heat to medlow or low for a bare simmer. Cook for 5 to 10 minutes.
  2. Discard the lemongrass and garlic. Season and top with the cilantro
