Ingredients
  

  • 1 carrot, chopped into 1-inch pieces
  • 1 6-inch 6-inch
  • 1 leaf dried dulse
  • 8 dried shiitakes
  • 2–3 quarts cold water

Method
 

  1. Add all ingredients to a pot. Bring to a bare simmer on med-high heat. Continue cooking, covered, for 20 minutes.
  2. Strain broth through a fine sieve. Use the stock right away or transfer into 2, 1-quart sized jars, sealing their lids. Store up to 5 days or freeze for 6 months.
